
THE SAUCE

THE WINGS
-Cut wings into pieces and place on a tray with paper towel to drain excess moisture
-salt and pepper wings
-heat deep fryer to hi or 375 degrees
-cook twenty wings at a time in fryer for 15-20 minutes or until dark golden brown
-remove wings from fryer, put in pot with a lid
-using a large serving spoon pour 3 scoops of sauce on the cooked wings (if the wings do not sizzle when the sauce is poured on, the wings are not done yet, and your fryer may be set too low)
-put lid on pot, hold lid on and shake vigorously to coat wings with sauce
-dump out on to plate and serve with celery and Renee's Blue Cheese Dressing (all other brands are vastly inferior)
Note: In 2002 Renee's changed the recipe for their dressing. The biggest change was removing the base ingredient of sour cream and replacing it with buttermilk. Although it is now but a shadow of its former self, it's still the best currently on the market.
